CLEAN EATING AT SCHOOL

Our meals are made from whole ingredients and are plant-based. Whenever possible, our students in the Elementary and Casa classes are involved in some type of meal preparation. Sometimes they prepare meals from scratch, for example, bean salads or nourishing “bowls.” At times the Elementary class prepares the meal of the day in the kitchen, and other times they simply help by cutting ingredients for the meals.

Both classes also make their own snacks. This may include oat and date balls, granola bars, healthy cookies, cutting up fruits and vegetables, spreading jam on bread, or even making bread from scratch. Healthy, clean eating is an essential part of our program, as we see it as inseparable from education.

Our typical meals include lentil or bean soups and stews, vegetable “gumbo” soups, tofu prepared in many different ways, whole potatoes, and wholesome grains such as millet, various types of rice, and whole-grain pasta. Fresh vegetables, such as carrots, cabbage, and avocado, are served with the meals.

We try to avoid exotic, non-indigenous produce, but we occasionally serve pineapple or certain types of melon. In our garden we grow kale, carrots, potatoes, and lettuce, which we usually enjoy in May and June, and again in the fall. Our students absolutely love kale salad made from kale grown in our own garden.

We have included the cost of our meal program in the tuition, as we do not see a separation between providing holistic education and clean eating. Please keep this in mind when searching for a school and when comparing tuition fees.
